makes 15–16 mochi
- 3 cups rice
- 1¼ cups water
- potato starch (katakuriko)
- Wash the rice. Soak for two hours.
- Blend the water and the soaked rice in food processor or blender for three minutes on its "high" setting.
- Pour mixture into covered baking dish. Microwave on the "high" setting for five minutes. Let stand for three minutes after.
- Form balls of dough with starched hands or cookie scoop. Roll surface in potato starch.
- Parboil the mochi if you do not wish to eat the starch.
