makes 15–16 mochi


  • 3 cups rice
  • 1¼ cups water
  • potato starch (katakuriko)


  1. Wash the rice. Soak for two hours.
  2. Blend the water and the soaked rice in food processor or blender for three minutes on its "high" setting.
  3. Pour mixture into covered baking dish. Microwave on the "high" setting for five minutes. Let stand for three minutes after.
  4. Form balls of dough with starched hands or cookie scoop. Roll surface in potato starch.
    • Parboil the mochi if you do not wish to eat the starch.
