Butter Mochi
yields 9"×13" pan
Ingredients
Dry
- 3½ cups (1 box) mochiko
 - 3 cups sugar
 - 1 tablespoon baking powder, sifted
 
Wet
- 2 cups dairy milk
 - 12 ounces coconut milk
 - ½ cup (1 block) butter, melted
 - 1 teaspoon vanilla extract
 - 5 eggs
 
Instructions
- Preheat oven to 350° Fahrenheit.
 - Mix dry ingredients together, then mix in the wet ingredients.
 - Pour into well-greased 9"×13" baking pan. (For this recipe, I recommend ghee or coconut .)
 - Bake for 30 minutes. Rotate pan 180°. Bake for another 30 minutes.
 - Serve warm or cooled. Do not eat straight out of the oven. It will be sticky, buttery, and infernally hot.
