Butter Mochi

yields 9"×13" pan

Ingredients

Dry

  • 3½ cups (1 box) mochiko
  • 3 cups sugar
  • 1 tablespoon baking powder, sifted

Wet

  • 2 cups dairy milk
  • 12 ounces coconut milk
  • ½ cup (1 block) butter, melted
  • 1 teaspoon vanilla extract
  • 5 eggs

Instructions

  1. Preheat oven to 350° Fahrenheit.
  2. Mix dry ingredients together, then mix in the wet ingredients.
  3. Pour into well-greased 9"×13" baking pan. (For this recipe, I recommend ghee or coconut .)
  4. Bake for 30 minutes. Rotate pan 180°. Bake for another 30 minutes.
  5. Serve warm or cooled. Do not eat straight out of the oven. It will be sticky, buttery, and infernally hot.
