Sushi Rice

yields 4 cups

Ingredients

  • 4 cups rice (short-grain white is best)
  • 4 cups water
  • ½ cup sugar
  • ½ cup rice vinegar
  • 1 teaspoon salt

Instructions

  1. Rinse and drain rice. Add water, cooking it in a rice cooker.
  2. Combine sugar, vinegar, and salt into a small bowl or saucepan. Heat bowl in microwave for two minutes, or saucepan on stovetop until sugar dissolves.
  3. Cool liquid mixture and cooked rice. Combine cooked ingredients, stirring until completely mixed.
